Function outweighs fashion, although many of Wong's spice kitchen designs include quartz countertops, double sinks, full- sized fridges, microwaves and even dishwashers. The most significant pieces, of course, are a cooking range with excellent ventilation, whether it's by way of an under-cabinet hood with a powerful fan or a metal chimney-style hood. Gas or electric cooktops are entirely up to the homeowner, though Wong says clients who cook many of their meals with woks almost always prefer to use gas. "If there's a bigger emphasis on the wok, there's a gas range to get higher heat faster compared to electric," she says. Many spice kitchens also have room to house all of those clunky yet essential small appliances that tend to clutter up countertops — air fryers, toasters, coffee makers, blenders, you name it. The spice kitchen must be designed with workflow in mind, with all cooking utensils, cookware and, yes, seasonings close at hand to maximize functionality when things get heated. Proper storage solutions and organization are crucial components to ensuring everything is at the chef's fingertips. Given the fact that this small but mighty kitchen seems to be carrying the brunt of the culinary creation load, what is left for that gleaming, minimalist primary kitchen space, anyway? "The main kitchen is still pretty much a regular, full-functioning kitchen; it just doesn't get as much use," Wong says with a laugh. "They will still have a free-standing range or cooktop, a fridge, a sink and a dishwasher." And perhaps a little less grease.
