Sauteforthreeminutesmoreoruntilcranberriesaresoftened.Stirinrice, seasonwithsaltandpepperandsetaside.Placeturkeybreastflatskin sidedown. Placeapieceofwaxorparchmentpaperontopandflatten withthesideofameatmalletorarollingpinuntilturkeybreastisof fairlyuniformthickness. Inasmallbowl,combinemaplesyrupandbutterwell.Removewaxpaper andspread1/4cup(50mL)ofthebuttermixtureontheinsideoftheturkey breast.Spoonthestuffingmixtureonbreastleavingatwoinchborder aroundthesides.Startingatoneend,foldtheturkeybreastaroundthe stuffing,fullyenclosingthestuffingandsecurewithstringorskewers.Lay thecarrotsinthebottomofalightlyoiledroastingpan.Placetheturkey breastseamsidedownonthecarrotsandrubwithanother1/4cupofthe buttermixture.Seasonwithsalt,pepperanddriedsagethencoverandbake for30minutes.Uncoverandcontinuetobakefor1houroruntilameat thermometerregisters180ºF(85ºC).Letturkeyrest5minutes. Inthemeantime,heatremainingbutterandmaplesyruponmediumheat untilmixturebeginstoboilandstartstoreduce.Whenmixtureappears thickenedremovefromheat.Removestringorskewersfromturkeybreast andsliceinone-inchthickslices.Servewithroastedcarrotsandmaple syrup.
