It involves using a low heat setting (200 °F - 250°F) and placing food close to but not directly on the heat source. Barbecuing is recommended for large or tough cuts of meat such as whole birds, large roasts, whole fatty fish and ribs. Grilling uses direct, medium to high heat (350 °F - 400 °F) to quickly cook food right above the heat source. This results in a quick searing of the surface, leaving the inside juicy and tender. Grill cooking is best suited for small, thin or tender cuts of meat that take little time to cook, ideally 30 minutes or less. Grilling is prefect for steaks, burgers, hot dogs, chicken pieces, chops, firm fish, vegetables and fruit.
