Assiniboine Park and Zoo holds several winter gardening classes, including a new one on Kokedema. "We have some fun gardening programs. Kokedema is a Japanese string garden technique that's been called the poor man's bonsai," Scouten says. Other gardening classes include one on exotic plants and another on growing an indoor herb garden. "We'll highlight some of the exotic plants people on the Prairies can grow in their homes, including cinnamon trees and blue-jay vines," says Scouten. "The herb garden program demonstrates how we can enjoy herbs all year round in our homes. We'll get kits ready for everybody." Foodies won't want to miss the Edible Alchemy classes, which will teach participants how to make their own hot sauces and mustards, soda and drinks, seed-and-nut cheeses and probiotic dips. "These classes are perfect for anyone interested in food who wants to learn more about making their own," Scouten says. "Kombucha is very popular these days, and the soda-and-drinks course will also cover how to make your own soda out of herbs and fruit." A class on honey harvesting and honey- and-cheese pairing promises to be both tasty and educational. "It will be a fun night talking about bees and honey and cheese. The Bee Project will demonstrate how they extract honey. They have different hives throughout the city," says Scouten. "They're drawing attention to the plight of bees, and it's always important for us to talk about conservation." Local artist Willow Wolf teaches painting techniques at the popular Park and Paint Nights. Participants can choose between chickadee, polar bear or butterfly paintings this session. "You get to learn to paint and take home a nice project at the end of the evening," Scouten says. "It's a lot of fun." At Booth UC, a growing open-enrolment institution in downtown Winnipeg, the focus is on uniting faith and business for a better world. While business programs typically offer a range of standard courses, Booth UC's Bachelor of Business Administration program also offers a number of unique, socially oriented classes such as Business Ethics & Social Responsibility and Leading Change in an Organization. Thanks to the addition of new majors in the program, including both Financial Crimes and Management & Innovation, students have the opportunity to major in unique areas that can give them an edge in the job market.
