"A treat wine should make you sit up and notice that you're going upstream and it elevates the evening," she said. Wine can quench your thirst in the summer heat just as well, or better, than beer, she said. "There are three things that are good to freshen up the palate — acidity, temperature and bubbles. "You drink it cold like white wine so it's great on a hot day but it stands up a little better to a bigger dish than a simple white wine does."
