" Italian Soup Hearty
1 - 2 lb / 0.5 - 1.0 kg Canadian pork loin roast
2 tsp / 10 mL canola oil 1 small onion, chopped 1 tsp / 5 mL Italian seasoning
3 cups / 750 mL sodium-reduced chicken broth
1-19 oz / 540 mL can 'no salt added' diced tomatoes, undrained
1-19 oz / 540 mL can Romano or white kidney beans, drained and rinsed
8 oz / 227 g fresh spinach leaves, shredded
Trim roast of any visible fat; cut into ¾"(1.875 cm) cubes. Heat oil in a deep saucepan over medium-high heat. Brown pork cubes and onion. Add Italian seasoning. When onions are soft, add remaining ingredients,
except spinach; bring to a boil. Lower heat and allow soup to simmer, about 15 minutes. Stir in shredded spinach; cook 2 minutes more.
