This, paired with the interesting blends the company concocts, has made it a popular ingredient on some of the hipper restaurant menus around the province. Eastern Winnipeg's Unburger uses Bothwell cheddar on six of its burgers. Fusion Grill created an apple, bacon and Bothwell cheddar frittata. Fude serves it up in platters and Steinbach's Livery Barn even uses it in borscht. Now that Bothwell – an operation of about 60 local staff, many of whose parents and grandparents have worked in the cheese business – has ingrained itself into the palates of locals, it's hoping to catch more buzz throughout the rest of Canada. It's also attracting more attention since some of its products became kosher certified over the summer. "We definitely want to expand," Trochim says. "Our cheese is distributed through the West, but we're really working on it making its way through the East." Just a short drive east from New Bothwell is Nature's Farm, another Landmark & Area Chamber of Commerce Niverville Chamber of Commerce and wrapped in the Bothwell plant. Jackie Culley, a Winnipeg mother of two, says the Steinbachbased company's Smart Eggs – omega-3 free-run eggs and organic eggs produced by hens who move freely around the barn and feed on strict vegetarian diets – are all they're cracked up to be. "It's nice to feed your family an egg grown in more of a normal and natural situation. I also feel a farm-fresh egg grown in a natural situation is just going to be a more nutritious egg." Founded as a small poultry operation by Hermann and Sheryl Grauer in 1987, Nature's Farm branched out into the pasta business in 1993. Like Bothwell, the company specializes in farm fresh ingredients and goes bold with variety, producing everything from black fettuccine to red curry linguine and key lime chili penne.  The company also has basic pastas covered in its organic line, and pasta shapes come in every variety from petite orzo to lasagna sheets, all packaged in compost-friendly bags. Granola is Nature's Farm's latest venture, and there are three flavours so far: honey almond, molasses and seeds and maple pecan. The new 7,944 sq. ft. facility will need 36 employees to staff a gas station and the grocery store. The Tim Hortons kiosk will require another 12 full-time and 12 part-time staff. The grand opening is slated for March 13, 2013. On a related note, kids from Sagkeeng are expected to be among campers at the Tim Hortons Children's Foundation year-round camp at nearby Sylvia Lake. The camp is also expected to open next year.
