Creamy, tropical and indulgently smooth, this mocktail captures the essence of island refreshment. Lush and fruit-forward, this alcohol-free version offers all the classic flavours of a piña colada with a clean vibrant finish. INGREDIENTS: 1 cup fresh or frozen pineapple chunks 3/4 cup pineapple juice 1/2 cup coconut milk or coconut cream (for a richer texture) 1/2 cup ice 1–2 tsp honey or simple syrup (optional, to taste) FOR GARNISH: Pineapple wedge Cocktail umbrella or decorative pick Fresh mint sprig (optional) Toasted coconut flakes or sugar, for rimming (optional) INSTRUCTIONS: 1. If desired, rim a chilled hurricane or stemmed glass with sugar or toasted coconut for added texture and flavour. 2. In a blender, combine pineapple chunks, pineapple juice, coconut milk and ice. Blend on high until smooth and creamy with a thick, frosty consistency. 3. Taste and add honey or simple syrup if additional sweetness is desired. Blend briefly to incorporate. 4. Pour the mixture into the prepared glass. 5. Garnish with a pineapple wedge, a decorative pick or umbrella, and a sprig of mint, if using. Serve immediately.

Pour in the orange juice, grapefruit juice and cherry juice. 3. Top with mineral water to your desired level of fizz and dilution. 4. Gently stir to combine. 5. Garnish with an orange slice and a sprig of thyme. Serve immediately.
