Grilled Eggplant WITH FETA AND GREEK COUSCOUS This light and flavourful dish pairs smoky grilled eggplant with a bright protein-packed Greek couscous. Thick slices of eggplant are brushed with olive oil, seasoned with oregano, salt and pepper and grilled until tender before being topped with crum- bled feta that melts into the warm vegetables. This Mediterra- nean-style dish is perfect for a wholesome and colourful meal.

D rizzle eggplant slices with olive oil. Sprinkle evenly with oregano, salt and pepper. Grill 6 minutes on each side or until tender. Sprinkle eggplant with cheese; grill 2 minutes or until cheese melts. While eggplant grills, prepare Greek couscous. P lace 2 eggplant slices on each of 4 plates. Top each serving with 1 cup couscous. Garnish with oregano sprigs, if desired.

GREEK COUSCOUS MAKES 4 1-CUP SERVINGS INGREDIENTS: 2
cups hot cooked whole-wheat couscous
1/4 cup pitted kalamata olives, halved 2 tbsp balsamic vinegar 1 tbsp olive oil 20 grape tomatoes, quartered 1
1 5-oz can no-salt-added cannellini beans, rinsed and drained
INSTRUCTIONS: 1.
Combine all ingredients in a medium bowl. Cover and refrigerate for 10 minutes.

INGREDIENTS: 1 1/2 oz Irish whiskey 1/4 oz lime juice, freshly squeezed 2 oz ginger ale, chilled, to top Lime wheel to garnish
INSTRUCTIONS: 1. Add the whiskey and lime juice into a Collins glass filled with ice. 2. Top with the ginger ale, stirring gently and briefly to combine. 3. Garnish with a lime wheel.
