FATHER'S DAY RECIPES

Celebrate Dad with a Father’s Day treat that’s equal parts rugged and indulgent. These “Grill Guide Cook- ies” are rich, ultra-chocolatey and designed to bake right on the barbecue for a fun fire-kissed twist on a classic. With a gooey brownie-like centre, crackly edg- es and layers of melty chocolate chips, these cookies bring big flavour with backyard-worthy flair. Perfect for dads who love their grill as much as their sweets.

DRY INGREDIENTS: 1

cup + 2 tbsp all-purpose flour tbsp unsweetened cocoa powder

1/2 tsp salt WET INGREDIENTS: 2 1/2 tbsp unsalted butter (cut into tiny cubes) 1/2 cup granulated sugar 1/4 cup light brown sugar (packed) 2 large eggs (at room temperature) 2 tbsp whole milk (at room temperature) 2 1/2 tsp vanilla extract CHOCOLATE: 2 c ups semi-sweet chocolate chips (divided),

plus extra for decorating (optional) Flaky sea salt for sprinkling (optional)

INSTRUCTIONS : 1.

H eat barbecue to 325 F (160 C) and line two large baking sheets with parchment paper. Whisk together the flour, cocoa powder, baking powder and salt in a medium bowl; set aside. M elt 1 cup of the chocolate chips and the butter in a microwave-safe bowl in 15-30 second intervals, stirring between each, until smooth. Do not over- heat. C ombine the granulated and brown sugars and the eggs in a large bowl. Then add in the milk and vanilla; mix well. Finally, stir in the cooled melted chocolate mixture until well combined. F old the dry ingredients into the wet mixture until just a few dry streaks remain. Fold in the remain - ing chocolate chips until no dry streaks remain. S coop the dough onto the prepared baking sheets using a medium cookie scoop, ensuring 2–3 inches of space between each to allow for spreading. Place cookies into barbecue over indirect heat. B ake for about 15–16 minutes or until the edges are set but the centres still look slightly under- done; they will continue to set as they cool. Decorate: If desired, sprinkle the tops with flaky sea salt and press a few extra chocolate chips on top immediately after removing them from the oven.

1. Treat your grill like an oven To bake cookies, you need indirect heat. Gas BBQ • Turn one side of the burners off and bake on the unlit side.  Charcoal BBQ • Push charcoal to one side to create a hot zone and a cooler baking zone. • Place cookies on the opposite side of the coals. 2. Manage smoke flavour Unless you want smoky cookies, avoid wood chips and make sure your grill grates are clean to prevent unwanted flavour transfer. 3. Expect slightly shorter cook times Barbecues run hot on the bottom. Check a few minutes early to avoid over-cooking.
