RWB Chocolate Ginger Cookies

Makes 3 dozen cookies
Ingredients ¾ cup softened butter ½ cup
margarine 1 cup white sugar 1 cup brown sugar 1 Tbsp vanilla ¼ cup finely grated fresh ginger root 3 large eggs, room temperature 3 ½ cups all purpose flour 1 cup cocoa powder 2 tsp salt 1 ½ tsp baking soda 2 cups chocolate chunks Directions 1. Preheat oven to 350F. 2. Grease or line three cookie sheets with parchment paper. 3. Cream butter, margarine and sugars. Once the sugar has dissolved and the mixture is light and fluffy, add the eggs one at a time and beat until glossy and creamy in colour. 4. Beat in vanilla and grated ginger. 5. In a separate bowl, sift together the dry ingredients. 6. Carefully add the sifted dry ingredients to the wet mixture and blend until a consistent dough has formed. 7. Add chocolate chunks and mix to distribute evenly throughout. 8. Scoop onto prepared cookie sheets and bake just until set, about 10 minutes. 9.
