THE FOOD HALL AT THE FORKS MARKET
Savour Manitoba ’s Alex Allardyce sat down with Hailey to talk about what it takes to become a certified cicerone, how she approaches building a beer list that keeps guests coming back and what excites her most about the craft beer scene in Winnipeg. How did you get into the beer industry? Did you always know that you wanted to work in beer? I didn’t always know. Rewind to 2016 and I was a night manager at A Little Pizza Heaven, and I worked coat check or shooter bar at a handful of night- clubs. I wanted a 9-to-5 job, and as fast as possible, so I could finally feel like my peers. I took a one-year course at RRC Polytech for manufacturing
pharmaceuticals in the hopes of getting a day job. That gave me soft lab skills like using a microscope, creating streak plates and aseptic technique. I knew the pharmaceutical world wasn’t for me, but it really got me back into science.
Half Pints was starting both their lab program and their brand new taproom, and luckily they took a chance on both my front-of-house and back-of-house skills. I was very green, but they were patient and taught me everything.
