Cheesy Potato Nachos

INSTRUCTIONS: 1. Preheat oven to 400 F. 2. Thinly slice the potatoes (about 1/8”). 3. Toss sliced potatoes with oil, salt and pepper. 4. Arrange in a single layer on parchment-lined baking sheet. Multiple sheets may be needed. 5. Bake at 400 F for 25–30 minutes, flipping halfway, until golden and crisp. 6. Layer the cooked sliced potatoes on an oven-safe platter. Sprinkle cheese within the layers and on top. 7. Return to oven 5–10 minutes until cheese is melted and desired level of crispiness is achieved.

INGREDIENTS: 6 medium russet potatoes 2 tbsp olive oil 1/2 tsp salt 1/2 tsp black pepper 1 cup shredded cheddar cheese 1/2 cup salsa 2 tbsp jalapeños, sliced Topping options: Sour cream, diced tomatoes, taco beef, jalapeños, green onion and salsa.
