Classic Shortbread Cookies PREP TIME: 20 MIN. | COOK TIME: 18 MIN. | MAKES: 17 INGREDIENTS: 1 cup salted Notre Dame Creamery butter, softened 1/2 cup icing sugar 1 1/2 cups all-purpose Prairie Flour Mills flour 1/2 cup cornstarch Optional: festive sprinkles or coloured sugar for decorating INSTRUCTIONS: 1. Preheat oven to 300 F. Line a baking sheet with parchment paper. 2. In a bowl, combine butter, icing sugar, flour and cornstarch. Mix until just combined — don’t overwork. 3. Roll dough into 1-inch balls or gently press into rounds. Place on baking sheet. 4. Add sprinkles or coloured sugar if desired. 5. Bake for 15 minutes or until edges are barely golden. Do not overbake. 6. Let cookies cool on the pan for a few minutes, then transfer to a wire rack.

INGREDIENTS: 1 cup Medjool dates, pitted 1/2 cup natural peanut butter 1/4 cup pure maple syrup 1/3 cup raw cacao powder or high-quality baking cocoa 1/4 cup chopped walnuts 1 tbsp coconut oil Pinch of sea salt flakes INSTRUCTIONS: 1. Line a small baking dish with parchment paper. 2. In a food processor, blend dates until smooth. 3. Add peanut butter, maple syrup, cocoa powder, coconut oil and salt. Blend until well combined. 4. Pulse in chopped walnuts. 5. Press mixture into the dish evenly. 6. Refrigerate for 30–60 minutes until firm. 7. Cut into squares and enjoy!
