OFTEN THEIR SPICE KITCHEN WILL BE LARGE ENOUGH THAT THEY’RE USING THAT AS A PANTRY AS WELL, BUT OFTEN THEY’LL HAVE BOTH.
The cost depends on the room’s size, appliances and type of cabinetry. Swan says appliances in the spice kitchens his company builds usually aren’t as high-end as those in the main kitchen, nor is the cabinetry always the same quality because the door is often closed. Swan and Vassallo estimate that, on average, a fully outfitted spice kitchen can range from $10,000 to $15,000. Clients who cook a lot of heavily spiced foods find it’s worth the price to be able to isolate odours, and the extra counter space and cabinetry gives them a second food preparation and storage area. Another advantage is having the ability to control food service while entertaining, Vassallo says. “When you have a party, most people congregate around the island,” he says. “If you’re catering it or you’re cooking yourself, say appetizers, it’s very difficult when you get something out of the oven and now everyone is picking off the pan before it gets to the serving plate. “Clients are seeing it as a benefit if they entertain quite a bit.”
