Buttermilk Irish Soda Bread

Stir in 1 cup buttermilk and 1 egg until just combined. SHAPE LOAF Turn the dough onto a lightly floured surface and knead it slightly. Form into a round loaf (note: dough will be slightly sticky) and place it on the prepared baking sheet. BRUSH & SCORE In a small bowl, mix melted butter and 1/4 cup buttermilk. Brush the loaf with this mixture. Use a sharp knife to cut an "X" into the top of the loaf. BAKE Bake for 45 to 50 minutes or until a toothpick inserted into the centre comes out clean. TIP Check for doneness after 30 minutes and brush with more butter mixture during baking if desired.
