INGREDIENTS
1 cup quinoa
2 cups peas (frozen)
1/4 cup chopped basil
1/4 cup chopped cilantro
1/2 cup feta cheese (crumbled)
1/2 cup almonds (crushed)
3 tbsp BeeMaid Honey
1/3 cup lemon juice
1/3 cup olive oil
1/4 tsp salt (to taste)
6 slices bacon (cooked until crispy)
DIRECTIONS
Cook the quinoa based on package
directions. Let chill in a bowl in the
fridge for 2-3 hours to allow it to
separate.
Boil your peas for 1-2 minutes
and drain. Add the peas to a
large bowl along with the quinoa,
crumbled feta, bacon bits, almonds
and herbs. Toss together until
ingredients are evenly mixed.
Using a food processor, puree
your BeeMaid Honey, olive oil,
lemon juice and salt until smooth.
Toss the dressing in with
the salad ingredients and
season with salt and
pepper for serving.
