60 SAVOUR MANITOBA | FALL 24 Port Ease into the world of Port with the last sip of summer W hen most of us think of Portugal, we envision sipping small glasses of deep red Ruby Port. Some have heard of Vintage, late bottled- and Tawny Port too, but there are so many styles of Port extend beyond these options. Different colored Ports, namely pink and white, are becoming more popular. Pink Port is made from the same grapes as Ruby or tawny Port, but with less skin contact, so as to only extract a little bit of colour. White Port is made from — you guessed it — white grapes. Port is made from a slew of different grape varieties. And while they produce stunning wines, they are not commonly recognizable to many Manitobans. e Portuguese never jumped on to the trend of ripping out native vines and replanting them with Cabernet Sauvignon and Syrah. is is what makes Port so unique and impossible to replicate anywhere else in the world! It is always a blend of several grapes. Touriga Nacional is probably the most important red grape. It adds depth and color to the Port. White Port is often made from a blend of Viosinho, Malvasia Fina, Códega, and Rabigato. No Pinot Grigio to see here! Not sure that Port is for you? An easy way to ease into the world of Port is with the traditional Portuguese white Port cocktail! is refreshing sipper has been consumed in the Douro Valley for years — particularly in their long hot summer months! And recently this trend has made its way to North America. Choose a lighter pink or white Port, pour a couple of ounces into a rocks glass over ice, and top with tonic water. Garnish with mint and your favorite citrus. Port Tonics are not just for sipping on patios in the summer sun either, make a seasonal twist on it and garnish your pink Port Tonic with rosemary and cranberries. Or try a white Port Tonic with an orange slice and cinnamon stick. Experiment with different flavoured tonic as well. e options are endless!
