SUMMER REFRESHMENTS
Poppyseed and Honey Dairy-Free Dip
INGREDIENTS: 8 tbsp honey 1/2 tsp lemon juice 1 2
oz dairy-free cream cheese at room temperature
cup dairy-free whipping cream
1
tsp poppyseeds
INSTRUCTIONS: 1. Combine the cream cheese, honey and lemon juice in the bowl of an electric mixer. Beat on medium speed for 2–3 minutes until smooth. 2. Add the whipped cream and poppyseeds. Fold together with a spatula until evenly mixed. 3. Serve with fresh fruit. NOTES: Store leftover dip in an airtight container in the refrigerator for up to a week. Stir well before serving. 1 1/2 oz of your favourite rum 3 1/2 oz fresh lime juice 1/2 oz simple syrup
Splash of sparkling water Ice Watermelon wedge and mint sprig, for garnish
oz fresh watermelon juice*
*To make fresh watermelon juice: Blend seedless watermelon chunks until smooth, then strain through a fine mesh sieve. Refrigerate until ready to use. INSTRUCTIONS: 1. Fill a cocktail shaker with ice. Add the rum, watermelon juice, lime juice and simple syrup. 2. Shake well for 12–15 seconds until thoroughly chilled. 3. Strain into a glass filled with fresh ice. 4. Top with a splash of sparkling water. 5. Garnish with a watermelon wedge and a sprig of fresh mint. Serve immediately.
