Photo credit: Vision Awake Photography Like Wiebe and Hoeppner, Plett finds immense pleasure in a carefully-crafted cup, and treats Jonny's Java as a means to serve not just coffee, but the community and his fellow man. To the uninitiated, he can sound obsessive at first blush, able to rattle off an endless list of varietals from Guatemala, El Salvador and Ethiopia. But as true coffee-lovers can attest, there's more to life than plain old drip brews, and the pursuit of perfection can be as rich and rewarding as fine wine or haute cuisine. "Coffee is actually the most complex food item in the world," he explains. "Wine has about 74 chemical components, but coffee averages about 1,400." Plett's passion carries over to preparation — he's a big fan of the single-brew process — and to those who provide him with top-quality product. The Jonny's Java team deals only in direct-trade coffees, which pay farmers from 20% to 40% more than fair trade or market value. "Our roaster goes straight to the coffee farm and buys directly from the farmer," he explains.
